Penne All'
Arrabbiata
(Penne with Spicy Tomato Sauce) 2lbs.
(1kg) Penne Pasta
½ cup (125mL) Olive Oil
4tbsp. (60mL) Crushed Garlic
1 tsp. (5mL) Crushed Chilies
3 Ripe Tomatoes, peeled & coarsely diced
Salt & Pepper to taste
½ cup (125mL) grated Parmesan cheese
Preparation
In a large pot of boiling, salted water cook pasta
for 10 to 15 minutes until dente. Drain.
While pasta is cooking, heat oil the oil in a
frying pan over medium heat. Add garlic and chilies and cook until
garlic is golden in color. Add tomatoes. Reduce heat and continue
to cook for 10 to 15 minutes stirring frequently.
Add Pasta to the frying pan and toss well. Season
to taste with salt and pepper, adding a bit more oil if you like.
Serve immediately with Parmesan cheese.
